I know! I've got some explaining to do...
Well...first, its two days until Disney!!!!!!!!!!!! Exciting huh?!
Second...as many of you know, I broke my toe two Fridays ago! I couldn't walk up until today without my crutches. ((I just want to ask all of you to please be in prayer for my toe, because I will be in a wheelchair the WHOLE time in Disney. Except to get onto the rides of course!)) Thanks :)
Third...We've been so busy with Co-op and Church on Sundays and Wensdays, we've barely had time to breath.
Forth...IV'E JUST BEEN PLAIN BLOG LAZY!!!!
So to make up for lost time...I'm going to do a "Quote of the Day"

49 Days 'til Disney!!!

In the 8 times I've been, I have NEVER seen these beautiful fireworks, light up the sky in Epcot!
can't wait to see them :)

I've seen the old show, but this time they've added (drum roll, please)
LIGHTING MCQUEEN!!

12. This is the American Idol Experience in Hollywood Studios!
I've NEVER done this or seen it, so this trip I'm hoping to sing and watch the show!
But I've herd it's NOT the easiest thing to audition for!

13. This is well, you can see for yourself. One Man's Dream!
I think I've done this but I can't really remember anything in it.
And any way, this is one of the places that the Kingdom Keepers had been through. I HAVE to go now!

It's not a ride it's a show, and for those of you who really know me, you know I LOVE shows!

Okay, we were walking to a restaurant in Epcot and we passed this Pavilion, and we had herd a girl speaking in a Canadian accent. So she sees our LSU shirts and says: "Sir (to my father, in her cute little accent), what state is LSU from?" My Dad: "Girl, why that's Louisiana State. Where are you from?"
Right then I nearly hit my head on the nearest lamp poll. Sorry dad but DUH! She's Canadian!
The people around us were quite amused with his craziness ;)
If only he would have read her NAME TAG!

Giant Gingerbread House!!!
This is a REAL gingerbread house at the Grand Floridian Hotel in Disney World.
As you can see this is a large house, over 16 feet tall, only displayed at Christmas time...
This is the Hotel's recipe for Gingerbread.

Ingredients
2 sticks softened butter
2 1/2 cups confectioner’s sugar, sifted
2 eggs
1 1/4 teaspoon baking powder
1/2 teaspoon salt
3 2/3 cups all purpose flour
2 1/2 teaspoons ground cinnamon
2 1/4 teaspoons ground coriander
2 teaspoons ground star anise
1 teaspoon ground fennel
1 teaspoon ground ginger
1 teaspoon ground clove
1/4 teaspoon ground mace

1/4 cup milk
1 cup colored sugar granules

Directions
1. Cream the butter and sugar in a large mixing bowl until smooth using an electric mixer. Add the eggs and mix until combined.

4. Preheat oven to 350 degrees and grease cookie sheets.
5. Remove dough from refrigerator and allow dough to sit at room temperature for about 15 minutes, until pliable. Divide dough in half and place on floured work surface. Using a rolling pin, roll the dough out until about 1/8 inch thick. While rolling, flour the work surface and rolling pin as needed.
6. Cut out desired cookie shapes with cookie cutters. Transfer cookies to a greased cookie sheet, placing them 1 inch apart.
7. Lightly brush cookies with milk and sprinkle with sugar granules as desired.
8. Bake until firm and edges begin to darken, 10-14 minutes. Allow cookies to cool on the cookie sheet for a minute, then transfer to wire racks to cool completely.
Cook’s notes:
You can find star anise in the ethnic aisle in your local grocery store. To get the best flavor from this spice, you will need to grind the whole star anise pod. For the neatest edges, dip your cookie cutters in flour before cutting out each cookie.
